Each dish was creative and had layers of flavour. The highlights were the kelp lasagna, the bone marrow croquettes, and the spruce dessert (check out the full order below).

The kelp lasagna was a pleasant surprise - the clams worked really well with the rest of the dish. I wasn’t sure about the whole ‘seafood lasagna’ thing, but afterwards I was convinced it was a good idea. The bone marrow croquettes were jam packed with flavour, and dipping them into the truffle based dip added that umami kick. For dessert, we had the ‘spruce’, which included a beet sorbet, mushroom ‘soil’ and spruce parfait. There were a lot of different textures that worked really well together, from the crumble of the spruce to the earthiness of the mushroom ‘soil’ to the creaminess of the sorbet.

Highly recommend Published on Main for the inventive dishes. Not every dish was a home run, but each one was a fun experiment.
